Easy Cheese Cake

  • 2 Cups organic raw cashews
  • 3 Baby coconuts
  • 1/2 C coconut butter
  • 1/4 C honey
  • 1 Tablespoon Vanilla
  • Stevia to extend the  sweet taste of the honey
  • Zest and juice of one organic lemon
  • 1 Tablespoon psyllium
  • 2 pinches of Celtic sea salt

Soak the Cashews over night in filtered water. Place nuts in blender with the water of the coconuts, blend till smoooooth….add coconut meat,  coco butter, and rest of ingredients. put into frig for 15 minutes to make sure it will cut smoothly with a knife.  If it doesn’t, add  a bit more psyllium and blend well.  That will certainly create a smooth move! In and out!  Pour into cake pan with removable sides  put in freezer for two hours and then place in refrigerator when no one is looking and top with your favorite fruit or fruits. Serve.
